We started a very small team like 2 to 3 people with no background and foundation in baking. We were self-taught and a lot of research about sourdough has been done. We have also gone through a lot of failures.
Because of this, we are getting stronger, and our team always think out of the box. And because of limited resources, our team made use of whatever we have. Therefore, we started to bake in an old fashioned way.
Simple, old fashion, slow-produce and think-out-of-the-box are what we need in our team and kitchen.
We always keep thing simple yet sophisticated. We appreciate the “original” & “natural” of food & ingredients.
We adopted an old fashioned way to produce our baked goods and breads , hence TIME is the essence as it takes longer time to ferment, handcraft, and produce one baked good.
